What Is Saffron Made Of
Saffron has three main characteristics: odor from sativus, taste from picrocrocin, and color from crocetin.
More specifically, saffron stigma is built of many different components. These include minerals, carbohydrates, mucilage, vitamins (riboflavin and thiamine), color pigments (zeaxanthin, crocin, carotene, lycopene, anthocyanin), aromatic essence safranal, and flavoring substance picrocrocin. It should be noted crocin is the most important chemical in giving the color to saffron.
